Our Beer

Our beer comes in two categories. Our standard beers are going to be readily available year round, and are classic craft styles. BBxB’s food dishes will be built to pair with these beers.

Bogues Beauregarde (Saison)

A dry, slightly fruity Saison originally built upon wild yeast harvested from the skins of blueberries. Comes through with a medium fruity funk, without being full on “wild.”

Malts: Pilsner, Vienna, Flaked Barley, Aromatic Malt, Brown Sugar
Hops: Saaz, East Kent Golding
Yeast: Saison Brettanomyces Blend

Cap’n ‘Murica (American Pale Ale)

An award-winning American Pale Ale brewed with Chinook, Willamette, and Citra. The result is a not-overly bitter, but incredibly fragrant, pale ale. The nose on the beer is all tropical – mango, passion fruit, summer. An easy drinking pale ale for those that like hops.

Malts: US 2-Row, Crystal 10, Crystal 20, Crystal 40
Hops: Chinook, Willamette, Citra
Yeast: Safale-05

InkedInked (Oatmeal Stout)

An Oatmeal Stout with Piloncillo sugar, oats for creaminess, and some Centennial hops on the nose. This beer is our “base” stout for our Standard series, and will have variant versions in our Brazen series.

Malts: US 2-Row, Flaked Oats, Piloncillo Sugar, Crystal 40, Chocolate, Midnight Wheat, Roasted Barley
Hops: Magnum, Centennial
Yeast: Irish Ale

lovewins#lovewins (Amber Ale)

A hoppy amber ale with a little bit of rye for spiciness (’cause love is spicy) and hops that will accentuate that spice (Nugget and Cluster), brewed in celebration of the Supreme Court ruling on 6/26/15.

Malts: UK Pale 2-Row, Munich, Rye, Caramel 30L, Caramel 10L, Chocolate
Hops: Nugget, Cluster
Yeast: Pacific Ale

Monogamy CitraMonogamous (IPA)

An American single-hop IPA that will be brewed with a different hop each time.  Batch #1 was Simcoe, batch #2 was Citra, batch #3 was Nelson Sauvin.

Malts: US 2-Row, Pearl, Vienna, White Wheat, Turbinado Sugar
Hops: Varied
Yeast: Vermont Ale

DDNNNebula (Tripel)

A Belgian Tripel with some sugar for dryness (but less dry than many tripels) and some Galaxy hops for a punch in the nose. A standard tripel, slightly modified.

Malts: Pilsner, Turbinado Sugar, Carapils, White Sugar
Hops: Magnum, Galaxy
Yeast: Northeastern Abbey Ale

Brazen Series

150#150 (Barrel Aged Barleywine)

#150 is a big, badass American Barleywine aged in a Ranger Creek .44 Rye Whiskey barrel.

Malts: US 2-Row, Flaked Oats, Cara 45, Special B, Roasted Barley, Light & Amber LME
Hops: Chinook, Fuggle, Cascade
Yeast: Safale US-05

Inked AgrioAgrio Inked (Sour Stout)

Agrio is the sour version of Inked for our Brazen series. A sour, funky American Oatmeal Stout. Same base as Inked, but with the addition of Hill Country Souring Bacteria.

Malts: US 2-Row, Flaked Oats, Piloncillo Sugar, Crystal 40, Chocolate, Midnight Wheat, Roasted Barley
Hops: Magnum, Centennial
Yeast: Irish Ale, Souring Bacteria

(Imperial Sweet Stout)

An Imperial Sweet Stout aged on white oak and Papua New Guinea vanilla beans that were soaked in Jim Beam Black.

Malts: Marris Otter Pale, Special B, Caramel 60L, CaraMunich II, Lactose, Victory, Chocolate, Flaked Oats, Flaked Barley, Carafa Special II
Hops: Cluster, East Kent Golding, Fuggle
Yeast: Trappist High Gravity

Barry MangilowBarry Mangilow (NE Style Mango Triple IPA)

Barry Mangilow is a high-gravity IPA that balances the alcohol with sweetness from pure mango puree.  The fruit flavor is accentuated through the use of fruity hops, leaving you with something that is dangerously drinkable.

Malts: US 2-Row, Munich, Biscuit, LME, White Wheat
Hops: Simcoe, Citra, Hull Melon
Yeast: Vermont Ale

Lupulus Texensis (Wild IPA)Lupulus Texensis

Add Lupinus texensis (Texas Bluebonnet) to Humulus lupulus (hops) and you get Lupulus Texensis, a wild IPA. This beer includes wild yeast that was cultivated from native San Antonian Bluebonnets, making it a slice of San Antonio you won’t get anywhere else.

Malts: US 2-Row, Vienna, Biscuit, Cara 45, White Wheat
Hops: Falconer’s Flight, Opal, Smaragd

(Northeast Style Double IPA)

Mehoopany iPA is BBxB’s first “Northeast Style” IPA, a variety that is very underrepresented here in Texas. The goal was a very soft and juicy IPA with tons of mouthfeel. The name comes from the small town (Mehoopany, PA) that Ryan’s family comes from.

Malts: Pearl, Golden Promise, Turbinado, Flaked Wheat, Flaked Oats, White Wheat, Carapils, Caramel 20L
Hops: Columbus, Ahtanum, Azacca, Citra, Galaxy
Yeast: Wyeast London Ale III 1318

BBxB Something Wild

Something Wild this Way Comes
(American Wild Ale)

A Dry-hopped American Wild Ale brewed with natural Hill Country souring bacteria and wild yeast in the primary, aged on French Oak and Brettanomyces Bruxellensis in the secondary, then dry-hopped with Falconer’s Flight.

Malts: US 2-Row, CaraAroma 130

Supernova
(Dry-Hopped Tripel)

A dry-hopped version of Nebula. The same recipe, but in addition to the Galaxy aroma hops, Galaxy is also added into the post-fermentation.

Hops: Magnum, Galaxy
Yeast: Northeastern Abbey Ale

BBxB Tetahi e Waru TekauTetahi e Waru Tekau (aka 81)
(Imperial Southern Hemisphere Double IPA)

Tetahi e Waru Tekau (Tet-ah-hee eee wha-roo teh-cow) translates to “Eighty One” in the Māori language, as the original recipe was scheduled to come in at SG 1.081, 8.1% ABV and 81 IBUs. This is an Imperial IPA with Pacific Gem, Pacific Jade, and Wakatau hops.

Malts: Maris Otter Pale, Vienna, White Wheat, Caramel 20
Hops: Pacific Gem, Pacific Jade, Wakatau
Yeast: Safale US-05

Whipple Scrumptious Blueberry Delightwsbd
(Brettanomyces Blueberry Saison)

W.S.B.D. started life as Bogues Beauregade and the idea to make a blueberry version.  The recipe was overhauled to better show off the blueberry.  This beer uses a 1/2 pound of fruit per gallon in the whirlpool and 2 pounds per gallon in the secondary.

(Sour Brettanomyces Blueberry Saison)

Whizdoodle is W.S.B.D. with the addition of oak and souring bacteria.

(Helles-style Ale)

Helotes Helles takes the standard Helles lager recipe and adds corn and a touch of lime, then ferments it much warmer on an ale yeast.

Malts: Pilsner, Acidulated, White Wheat, Flaked Corn, Flaked Oats
Hops: Saphir, Tettnanger, Huell Melon
Yeast: Wyeast German Ale

Canela de Vainilla Inked
(Cinnamon Vanilla Oatmeal Stout)

Canela is the second variation of Inked for our Brazen series. Using the same base as Inked, we add cinnamon and vanilla to make this a roasty and warm winter stout, good for both of the cold nights in San Antonio annually.
